As the winner of endless bartending competitions, receiver of critical adulation and owner of many of London‘s most successful cocktail bars, Tony Conigliaro is quite a humble guy, due in part to his skilful, serious and diligent team. Pride of place amongst them goes to his protegee Zoe Burgess who shares the reins at Untitled, their stripped back and austere Dalston Bar that serves postmodernist cocktails you could imagine Jaques Lacan bolting back. 

Inspired by Andy Warhol, the silver area of The Factory, and Rei Kawakumbo of Commes Des Garcons, the space has a resolutely Hackney vibe. Guests either encircle a 1.5 ton slab of polished concrete that functions as a communal table (lending itself to flirting and people-watching) or (for those in a more intimate mood) grab a private pew in the back.

The cocktails are esoteric beyond the pale - laboratory-calibrated to resemble the title they‘ve been given. ‘Violin‘, made with oak, pine, beeswax, benzoin and black pepper, is a smoky, woody and elegant dram. Rye is crafted with, wait for it: rye, toasted rye syrup and rye bitters. But there‘s nothing wry about its voluptuous full body and flavour. Those with a predilection for the Med will be pleased with the Sicily: arid and floral with dry citrus vodka, verbena and bitter orange blossoms. 

Rob Roy Cameron has been enlisted to create a food menu that plays off the cocktails, and leans towards vegetarian ingredients and Japanese preparation, with dishes such as miso tomatoes with yuzu zest and daikon radish with nori, katsuobushi and umeboshi. Carnivores will be catered for with cured duck drizzled in a liquorice teriyaki sauce and a seriously succulent glazed beef rib picked up by pickled cucumber. Untitled is undoubtedly a creature of Dalston and inarguably a spot for cocktail connoisseurs.
