While sushi has gained such furious mobility that it's now available in every city in the world, there's another staple of the Japanese diet that doesn't attract nearly enough attention, and it should. London, it's high time that you met a lovely little dish named ramen! Tonkotsu is named after one of the porkiest, richest and most delectable varieties of the wheat noodle dish, which is on the menu created by Emma Reynolds and Ken Yamada of the blogger-celebrated City sushi canteen Tsuru. The brothy noodles come complete with toppings including marinate egg, slices of pork, wakame seaweed and bean shoots. If you're still hungry you supplement the meal with an item from their gyoza selection or a crab cream croquette.
