The Westbury Hotel has enlisted the efforts of Eric Chavot, who is perhaps best known for holding two Michelin stars at the Capital Hotel for ten years, to run his eponymous brasserie in Mayfair. Brasserie Chavot has opted to retain some elements of its former incarnation as The Gallery, including Italian mosaic tiling and 18th century French chandeliers, while supplementing the long room with dark red leather banquettes and chairs. Chavot has an adept hand at composing classic French cuisine with contemporary accents, apparent in dishes like snail Bourguignon with meatball and potato espuma or venison carpaccio with pickled red cabbage. The experience in itself is laidback yet ineffably grown up - with one Michelin star already allocated to Alyn Williams at the Westbury, there's a fair chance that the hotel may earn another.
