London becomes increasingly Latin with its newest Peruvian restaurant Coya, opened by restaurateur extraordinaire Arjun Waney, the brains behind Zuma and The Arts Club. Housed in an elegant Georgian building, Coya will comprise of a private members' bar, pisco bar, ceviche bar and restaurant with a design that nods to Peru's rich history by juxtaposing an Incan palette with modern metallic finishes. Head chef Sanjay Dwivedi (The Ivy, Astrid and Gaston) has devised a menu that updates traditional Peruvian plates for the London diner, with ceviches, tiraditos, parilladas and Josper-grilled meats featuring heavily on the menu. With live music, DJs and plenty of pisco, this cocktail is far from sour.
