Madrilleno chef Dabiz Muñoz made quite a splash when he first arrived in Mayfair, bringing across his signature brand of culinary wizardry to Old Burlington Street. Not content to rest on his laurels, he‘s set his sights on mixing drinks and pulled the trigger - creating a sort of edible mixology for gastronomically intrepid drinkers. Known as ‘liquid cuisine‘, the mission statement of CircusXO is to balance the elements of sweet, salt, sour and bitter flavours to devastating and dizzying effect. After a visit on a bustling Thursday night, we concluded mission accomplished.
For anyone who hasn‘t yet visited the bar, it‘s tucked in the corner of the Alice in Wonderland rabbit-hole adjoining StreetXO‘s dining room. The bar staff wear attire that blends inspiration from Clockwork Orange, Mary Shelley and Lewis Carroll, but more interestingly, they blend flavours to create potable version of Tom Kha Gai, Pekin Duck, Yellow Curry and Som Tum. However, if you‘d rather opt out of this culinary voyage and stay closer to the shore, there are two other sections of the menu comprising of more traditional drinks in the classic cocktail format. Either way, you‘re in for an acid test level of experimentation. CircusXO is quite a trip.
